Coaters and Crumbs

 

HICKORY COATER

A mild coater with a strong hickory smoke flavour, based on tomato, it has almost a sweet flavour, a touch of garlic and onion with a hint of ground white pepper provides a savoury background to its smoke flavour.

CARIBBEAN COATER

This complex blend of herbs and spices combined with fruit and diced peppers, to produce a beautiful coconut based coater, very mild, with fruity sweet creamy flavour, excellent with pork or poultry products.

JERK COATER

A most distinctive product, finest chillies, mustard and ginger produce a spicy hot profile which is not for the faint hearted, the sweet note from rich Demerara sugar does little to dampen the flames. Produces a dark brown colour.

SPICED GINGER AND ORANGE COATER

Very strong in ginger with just a hint of orange, gives a deep rich spicy note, reminiscent of ‘mulled wine’. Hints of tomato and cumin combine to produce a spicy aromatic note, suitable for pork products. Produces a dark orange/brown colour.

MINT & YOGHURT COATER

The English rubbed spearmint flavour provides the background note to this product. The yoghurt further enhanced by the addition of cream powder ensures a mild rich creamy flavour, ideal for lamb products. Produces a beige colour with visual mint.

CAJUN CRUMB

A spicy hot orange crumb coater with a large variety of rubbed herbs, gives rise to an attractive appearance for pork and chicken products. A hint of garlic, onion and tomato powder provides a mature balanced background note.

MISSISSIPPI CRUMB

A yellow crumb with the addition of several herbs and flaked leek provides a distinctive almost curry flavoured coater, the addition of ground celery produces a warm mellow background note ideal for pork products.

TEX MEX CRUMB

An orange based crumb combined with minced onions, red and green peppers and two types of course ground peppers. This is a mild balanced flavoured crumb with a warm back note, the addition of citric oils produces an interesting lemon flavour to compliment beef or pork products.

LEMON PEPPER CRUMB

An aromatic yellow crumb with visual diced red and green peppers, combined with course ground black pepper and flaked parsley. The addition of a lemon oil makes this an ideal product for any fish coating processes. A warm mellow crumb to enhance natural flavour rather than dominate it.

YELLOW AND ORANGE CRUMB

A brightly coloured unflavoured crumb for maximum eye appeal. The two colours combine to give a toned glow to fish and savoury products, (Scotch eggs etc).

CHEESEY CRUMB

A golden yellow crumb with the addition of cheddar cheese and a full cream milk, powder gives a full bodied rich creamy flavour. A savoury note is provided by the addition of onion powder and a selection of herbs and spices. Ideal for pork.

STEAKADO PEPPER CRUMB

Now a traditional based coater, containing peppers, chillies, paprika and celery, combined with red bell peppers, minced onions and crumb to give a course open texture, with a hint of lemon, this is an ideal coater for beef. Produces a light orange coater with visual peppers.
