Glazes

 

SWEET AND SOUR GLAZES

This distinctive Chinese dish faithfully reproduced here as a glaze, rich in tomato with minty note, blended with the sour notes of aecetic acid and slightly enhanced with smoke flavour gives rise to a bright mild product sweetened with sugars. Produces a light red/orange colour.

HOT AND SPICY GLAZE

A deep rich glaze containing crushed chilli, blends of peppers and paprika which rise to a full bodied, balanced flavour, quite a sweet product concentrating mainly in flavour rather than heat value. Gives an attractive pale orange colour with visual herbs.

CHINESE GLAZE

A much more intense colour than 11647, with a higher aniseed value, contains more tomato than 11647 and generally is a stronger but similar profile, higher salt value also gives rise to a more savoury flavour. Produces a dark ‘plum’ red colour.

TANDOORI GLAZE

A more complex version than R6031 utilising over ten ground herbs and spices combined with yoghurt powder, to give a flavoursome twist to the traditional product, very authentic mild Tandoori glaze. Gives rise to rich deep plum red colour.

PEPPER STEAK GLAZE

A distinctive flavour with mellow heat being derived from the ground black pepper, quite a mild glaze with a hint of vinegar. Coarse ground pepper and diced red bell pepper, further enhance the texture of this product. Not a hot glaze more emphasis on flavour than heat. A dark glaze with visible red peppers.

THAI GLAZE

Very rich mature flavour profile contains lemon grass and coconut milk, this is a non specific glaze to give a general Thai flavour to all meats, very creamy, mild with a hint of yoghurt to add to the milky lightness. Produces a light orange glaze with visible herbs.

GARLIC BUTTER GLAZE

Slightly salty savoury note enhanced by butter to produce a balanced all round flavour, strong in garlic, produces a golden colour very attractive but pungent! Produces a light beige colour with visible herbs.

MEXICAN GLAZE

A gentle mild glaze not overly hot but full bodied, this unique flavour being derived from tomato, cumin, paprika and a hint of chilli powder, combined to give an authentic flavour of the west. Producers an orangey brown colour with visual peppers.

GARLIC AND HERB GLAZE

A bright herb glaze with a background of garlic, very mild with a buttery note, gives rise to a golden yellow colour with very good aromatics, a nice all round product ideal for garlic lovers. Produces an orange/brown colour with visual herbs.

RED THAI GLAZE

Beautiful authentic Thai curry containing lemon grass, coconut and coriander, to produce this mild flavoursome dish of the east with a hint of onion and garlic. This is a fabulous flavour profile which mellows into the herby note but retains a warm mouth feel, contains chilli, paprika and red bell peppers. Produces an orange/red colour.

HOT & SPICY GLAZE

Sugar based glaze containing up to ten herbs and spices to produce a hot impact profile which mellows into the herby note, but retains a warm mouth feel, contains chilli, paprika and red bell peppers. Produces an orange/red colour.

BBQ GLAZE

A well balanced blend of chilli, paprika and tomato powder give a flavour, which when combined with garlic and onion, produces a mild profile enhanced by Hickory Smoke notes. Produces a brown/red colour with visual herbs.

GARDEN MINT GLAZE

A very English minty glaze, with a traditional vinegar flavour, to compliment the different mint species incorporated into the blend, very mild with sweet note to give a fresh flavour profile. Produces an orange colour with visual herbs.

CHINESE GLAZE

A very mild version of this firmly established favourite, gives rise to the good red colour associated with the product, with the traditional aniseed flavour, backed with tomato and garlic. Produces a deep rich ‘plum’ colour.

CHILLI GLAZE

This milder flavour concentrates on the flavour profile rather than the heat value, but still has a kick factor, slight tomato note coupled with onion and ginger. Produces an orange/brown colour.

TERIYAKI GLAZE

This authentic flavour profile generated from Soy Sauce, black pepper, cumin and a hint of lemon makes this mild glaze an obvious choice for fish and chicken products, further enhanced by a hint of blended bouquet garni. Produces a dark brown glaze.

TANDOORI RED GLAZE

This brightly coloured glaze associated with Indian food, with notes of garlic, tomato and cumin combine to produce a mild version of that much loved classic flavour. Gives rise to a deep pink/red colour.
